Filipino Menudo Recipe


Pork Menudo is a Stew that is popular in Mexico and the Philippines.

Main

1 kg Pork Tenderloin, cubed
100 g Fresh Pork Liver or Liver Spread
3 Medium Potatoes, cubed
2 Medium Carrots, cubed
1 Medium Onion, chopped
2 cloves of Garlic, chopped
1 Medium Red Bell Pepper, diced
1 Medium Green Bell Pepper, diced
120 ml Pineapple chunks
500 ml Tomato Sauce
100 ml Raisins
50 gm grated Parmesan or Romano cheese

Marinade

2 Bay leaves
250 ml Lemonade
60 ml Soy Sauce
30 ml Lemon Juice
1 Tablespoon Brown sugar
1 Lemon, just the zest.
Ground Black Pepper

Instructions:

Combine all of the Marinade ingredients.
Use half of this to soak the pork cubes with one of the bay leaves and leave it for at least 30 minutes.

Remove the Pork from the marinade and let it drain.

Saute the garlic and onion, and then add the Pork and the other half of the marinade and the remaining Bay leaf, simmer it, uncovered, until the liquid has reduced by about half.

Add the pork liver, tomato sauce, sugar, pineapple, carrots, potatoes and raisins, then simmer this until the vegetables are soft, about 25-30 minutes, stirring occasionally.

Add Peppers and any extra seasoning.

Add the grated cheese, allow it to melt, then stir it to even it out.

Serve while hot.
